- Plain Greek Yogurt: 1/2 cup (I’m using a 2% low-fat variety, but you can use non-fat or full-fat depending on your preference).
- Mayonnaise: 2 tablespoons (optional; you can skip this and use all Greek yogurt for a lighter version, or use all mayo for a richer salad).
- Fresh Lemon Juice: 1 tablespoon (to keep things bright).
- Honey: 2 teaspoons (just to round the flavors out).
- Sea Salt: A pinch.
- Black Pepper: To taste.
Preparing the Dressing
- Start by combining the Greek yogurt and mayonnaise in a bowl.
- Add the fresh lemon juice, honey, sea salt, and black pepper.
- Whisk everything together until you have a thick, creamy dressing.
Ingredients for the Chicken Salad
- Cooked Chicken Breast: 2 cups, chopped or shredded (equivalent to 12 oz or 340 g).
- Celery: 1/2 cup, finely diced (for crunch and texture).
- Red Onion: 1/4 cup, finely diced (or use scallions or shallots for a milder flavor).
- Dried Cranberries: 1/3 cup, roughly chopped.
- Walnuts: 2 tablespoons, chopped (for added texture).
Preparing the Chicken Salad
- Place the chopped or shredded chicken breast in a large bowl.
- Add the finely diced celery and red onion.
- Toss in the roughly chopped dried cranberries.
- Sprinkle the chopped walnuts over the top.
- Pour the prepared dressing over the chicken mixture.
- Gently toss all the ingredients together until everything is evenly coated with the dressing.
